If diarrhea and nausea persist, continue drinking diluted apple cider vinegar throughout the day in small amounts. For dinner, consume only a small portion of light, easily digestible food, such as boiled rice, toast, or clear soup. To help regulate the digestive tract, drink one glass of the diluted mixture with each meal for two or three days. Supporters of this remedy believe that the vinegar may help balance stomach acidity and limit harmful bacteria in the digestive system.



General Digestive Support

Beyond acute food poisoning, apple cider vinegar is often used to support digestion more generally. Some people drink a glass of water with one to two teaspoons of apple cider vinegar before meals to stimulate digestive juices and improve nutrient absorption. It is believed that the acetic acid content may enhance stomach acid production in individuals with low stomach acidity, thereby aiding digestion and reducing bloating.

How to Prepare Homemade Apple Cider Vinegar

Traditional homemade apple cider vinegar preparation requires patience and proper fermentation conditions. Below is the step-by-step method used in folk practice.

First, wash the apples thoroughly. Remove any rotten or worm-damaged parts. The apples can then be crushed, pressed, or coarsely grated. Place the resulting apple mash into an appropriately sized enamel pot. Avoid using metal containers that may react with the acid.

Pour warm, previously boiled water over the mash. The ratio is approximately 0.5 liters of water for every 0.4 kilograms of apples. For each liter of water added, mix in 100 grams of honey or sugar, 10 grams of baker’s yeast, and 20 grams of dried black bread. These ingredients help initiate and accelerate fermentation.



The container may be made of glass, wood (such as an open barrel), or enamel. It is essential to store it in a dark place because ultraviolet rays from sunlight can interfere with the fermentation process. The ideal temperature for fermentation is between 20–30°C (68–86°F).

First Stage of Fermentation

Keep the container in a warm environment for ten days. Stir the apple mash two to three times daily using a wooden spoon. This helps oxygen circulate and promotes even fermentation.



After ten days, transfer the mixture into a cheesecloth bag and strain it thoroughly. Then strain the extracted juice once again through clean cheesecloth to remove any remaining pulp. Weigh the resulting liquid and pour it into a wide-necked container.

For each liter of juice, you may add an additional 50–100 grams of honey or sugar. Stir until the mixture becomes completely uniform and the sweetener dissolves fully.



Second Stage of Fermentation

Cover the container with cheesecloth and secure it tightly around the opening. Return it to a warm place to continue fermentation. The fermentation process is considered complete when the liquid becomes calm, clear, and no longer produces bubbles. This process typically takes between 40 and 60 days.

Once fermentation is complete, pour the finished apple cider vinegar into bottles, filtering it again through a funnel lined with cheesecloth. Seal the bottles tightly and store them in a cool place.
